Occasionally it’s nice to end a meal with something special; a light, cool treat is especially welcome during the warmer months. This chilled berry soup might be just right and serving it in a pretty dish makes it tastes even better!
Put everything in a blender except the berries. Blend until smooth. Pour into a medium bowl and set in the freezer for an hour or so to get very cold. Stir well and pour into 2 dessert bowls, top with the berries and garnish if you like with fresh mint.
